Ingredients
- 1 pound deep-fried shrimp
- ½ cup bamboo shoots
- ½ cup carrots
- 2 sliced fresh ginger roots
- ½ cup leek stalk
- 1 tablespoon sherry
- 2 tablespoon ketchup
- 1 teaspoon vinegar
- 1 teaspoon soy sauce
- 1 tablespoon cornstarch
- 1 tablespoon sugar
- ½ teaspoon salt
- 2 tablespoon oil
- 3 tablespoon water
Preparation
- Dice carrots and bamboo shoots. Slice ginger roots and leek.
- Mix sugar, sherry, soy sauce, ketchup and vinegar in a big bowl. Take another bowl and blend cornstarch and cold water to a paste.
- Stir-fry ginger root and leek. Add bamboo shoots, carrots and stir-fry briefly to heat through. Add salt.
- Add sugar-ketchup mixture and stir-fry a couple of minutes to heat and blend.
- Add deep-fried shrimp just to reheat. Stir in cornstarch paste to thicken.
- Serve with greens.
