Deep fried shrimp with vegetables

Ingredients
  • 1 pound deep-fried shrimp
  • ½ cup bamboo shoots
  • ½ cup carrots
  • 2 sliced fresh ginger roots
  • ½ cup leek stalk
  • 1 tablespoon sherry
  • 2 tablespoon ketchup
  • 1 teaspoon vinegar
  • 1 teaspoon soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon sugar
  • ½ teaspoon salt
  • 2 tablespoon oil
  • 3 tablespoon water
Preparation
  • Dice carrots and bamboo shoots. Slice ginger roots and leek.
  • Mix sugar, sherry, soy sauce, ketchup and vinegar in a big bowl. Take another bowl and blend cornstarch and cold water to a paste.
  • Stir-fry ginger root and leek. Add bamboo shoots, carrots and stir-fry briefly to heat through. Add salt.
  • Add sugar-ketchup mixture and stir-fry a couple of minutes to heat and blend.
  • Add deep-fried shrimp just to reheat. Stir in cornstarch paste to thicken.
  • Serve with greens.
